Château Minuty makes this Côtes de Provence rosé from Grenache, Syrah, Rolle and Cinsault grown on the Saint-Tropez peninsula. Organically farmed and pale salmon in colour, it shows apricot, yellow peach and a delicate floral lift over fresh acidity.
Description
Château Minuty is one of the reference estates of the Côtes de Provence, working organically farmed vineyards on the Saint-Tropez peninsula where the Matton brothers established the modern house around twenty-five years ago. The schist and clay-limestone soils of the coastal hills, combined with maritime breezes and warm Mediterranean days, give Grenache, Syrah, Rolle and Cinsault that ripen evenly while holding acidity. The blend is direct pressed and fermented cold in stainless steel, a method that limits skin contact to keep the colour pale and protects the primary fruit and floral aromatics from oxidation. The result is a very pale salmon rosé. The nose leads with apricot and yellow peach lifted by white flowers and a touch of citrus peel. The palate is dry and fresh, with red berry and melon fruit carried by clean acidity and a faintly saline finish that reflects the proximity to the sea. Serve well chilled at 8 to 10 degrees in a white wine glass. It works as an aperitif and partners grilled prawns, sea bass and Niçoise salad.
