Description
Minke comes from the Clonakilty Distillery on Ireland's south coast, a place defined by its closeness to the Atlantic and the region's harsh maritime weather. Its character hinges on one wild ingredient: rock samphire, the sea fennel harvested straight from the rocky coastline, which lends the gin a salty, mineral freshness you cannot fake. Around it sit classic juniper and a set of finely balanced botanicals, all distilled in small batches by the traditional copper pot method for precision and purity. It has the silverware to match, including an IWS silver and a Best International Botanical Gin nod from the American Distilling Institute.
The nose is fresh and aromatic, juniper and lemon zest over sea fennel and white flowers. The palate is dry and lively, floral tones meeting light citrus, a salty sea breeze and subtle herbs. The finish is clean and long with mineral freshness and fine juniper. Serve it with a dry tonic and a sprig of rosemary, or pour it into a Southside alongside oysters.
