Description
MicroBio Sin Nombre is a natural Verdejo from Ismael Gozalo, an independent grower in Nieva in Castilla y León, working in the high, sandy-soiled country of the Rueda heartland where old ungrafted Verdejo vines still stand. The winemaking is deliberately hands-off: no acidity correction, no added enzymes, no CO2 adjustment until bottling, and no fining, filtering or battonage. Fermentation runs on the grapes' own wild yeasts, and the wine is aged in wood, which adds texture and a savoury layer while the low-intervention approach keeps the fruit direct and the wine unpolished in the natural style. It is organic and vegan, and at 13.5 percent it stays fresh and concentrated. The colour is pale lemon, sometimes lightly hazy. The nose leads with citrus peel and green apple over a herbal, faintly wild edge and white flowers. The palate is fresh and dry, concentrated in the middle with a saline lift and a long, clean finish. Serve chilled at 9 to 11 degrees.
