Distilled on a pot still from fresh pressed sugar cane juice, it delivers aromatic fireworks: intense tropical fruit and fruit schnapps esters, savoury truffle and green olive, and a grassy, vegetal backbone, with a touch of caramel sweetness on the finish. The eccentric mix of overripe fruit and fermentation funk draws frequent comparison to Haitian clairin and high ester Jamaican whites.
