Description
Mitre is an artesanal joven mezcal made in Santiago Matatlan, the dense palenque heartland of the Oaxacan central valleys, by the maestros mezcaleros Don Tacho and his sons Joel and Laurentino across a second and third generation. It is built from cultivated Espadin, Agave angustifolia, the balanced cornerstone agave, and bottled by hand in the brand's lacquered jaguar head vessels.
The agave hearts are roasted for three days over mesquite in a conical pit lined with volcanic rock, the stage that gives the spirit its smoke, then crushed with a stone tahona wheel that tears the fibre and rounds the texture. Fermentation runs in pine vats with wild yeast over eight to twenty days, and distillation is split between copper alembics and clay pots over a wood fire. The nose carries wet grass, green quince and citrus, the palate confirming smoke alongside ripe fruit at 40 percent.
