Description
Mezcal MG is a small batch spirit from mezcalero Juan Manuel, who also makes Señor Sotol and Burrito Fiestero, and it sits between mezcal and gin. The base is wild Cenizo, the Agave durangensis that matures nine to thirteen years, worked in the traditional way that gives Cenizo its fruity, faintly creamy character before the second twist of the recipe.
It is built by the pechuga method, a distillation with ingredients suspended in the still, except the usual chicken breast is replaced by gin botanicals gathered from the surrounding hills, among them juniper, ancho chilli, hibiscus flower, avocado leaf and lemongrass. The vapour carries their aromatics through the spirit, so cooked agave and smoke from the underground roast meet juniper and a floral chilli lift. For each bottle made the producer plants new agave with local farmers. Bottled at 45%.
