Mendall is the natural wine estate of Laureano Serres Montagut in Terra Alta, inland Catalonia, and the Terme wines are named for the local custom of giving each house and plot its own name. Terme de Laureano is a varietal Cariñena, a grape well suited to this dry, high plateau. The vineyards grow on chalky soils at altitude, where cool nights preserve the acidity and freshness that define the style, while warm days bring the fruit to gentle ripeness. At thirteen per cent alcohol the wine is notably restrained for the region. Farming and cellar work are natural throughout, with wild yeasts, no fining or filtration and minimal sulphur. The wine spends twelve months in stainless steel, a neutral vessel that lets it settle and gain a little texture without oak influence, keeping the focus on pure fruit and site. The colour is a clear, light red. The nose shows fresh red fruit, redcurrant and dried herbs with a peppery, earthy note. The palate is light and savoury, with fine tannins, lively acidity and a clean, persistent finish. Serve at 14 to 16 degrees, lightly chilled. It pairs well with lighter meats and savoury vegetable dishes.
