Memorable Mezcal Tobasiche is a single wild agave joven made by Jose Diaz Bustamante in Miahuatlan, Oaxaca, part of a house that curates wild magueyes from the region. Tobasiche is a form of Agave karwinskii, the same complex as Madrecuixe and Barril, a slow growing wild plant that yields a mineral, herbal and savoury spirit with a characteristically dry edge.
The agave was cooked in an underground pit oven, crushed with a tahona, fermented with open air yeasts and twice distilled in a copper alembic, all artesanal practice that keeps the species in focus. The smoke here is folded into a fruit forward profile: the nose runs from raspberry jam and dusty attic through cut grass and raw cane to currant leaf, roasted hazelnut and dried epazote. The palate is dense and oily, with floral notes, honey, minerals, earth and capsicum, and a long, notably fruity finish. Bottled at 47%.
