Memorable Mezcal Tepeztate

Memorable selects its mezcals from respected palenques in and around Miahuatlan in Oaxaca, with a focus on wild agave, and this Tepeztate was made by Felipe Hernandez at his palenque in Las Salinas Coatecas. Tepeztate, Agave marmorata, is scarce in this part of Oaxaca, which makes it the most limited of the Memorable editions. It is an artesanal joven, bottled unaged at around 47.8%, with strength varying slightly between batches.
The nose is free of harsh alcohol, instead offering perfumed pine, sea breeze and seaweed, green pepper brine, lavender, green Sichuan pepper and a faint cinnamon. Green pepper sits present but restrained. The palate brings a hint of jalapeno and sweet agave fruit, peppery pear and a light smoke from the pit roasting, with a cooling, refreshing mouthfeel. Herbal, bright and unmistakably the work of a slow and wild maguey.
