It is distilled four times from English grain, a count high enough to strip away most congeners and leave a clean, soft spirit, then bottled at 40%. The repeated distillation is the key to its smoothness: each pass removes more of the heavier compounds, which is why the vodka pours so clear and reads so gently on the palate while still keeping a quiet cereal character.
The nose is clean and fresh with subtle cereal notes, the palate soft and smooth with a slight sweetness, and the finish mild and lingering. Its restrained, slightly sweet profile takes well to citrus and bubbles, so use it in a sparkling vodka serve: shake the Mayfair with fresh lemon juice and a little sugar, strain into a flute and top with a dry sparkling wine, a French 75 built on vodka, where the spirit stays light and lets the lemon and fizz lead.
