Maxime Cheurlin Noëllat farms Pinot Noir in Les Feusselottes, a Premier Cru parcel in Chambolle-Musigny on the Côte de Nuits in Burgundy. Chambolle is the most perfumed of the Côte de Nuits villages, and its limestone rich, relatively light and stony soils give wines of delicacy and floral lift rather than weight. Les Feusselottes lies in the southern part of the village near the Musigny boundary, and its calcareous soils translate into the wine's red fruit purity and silky texture. The continental climate, with warm days and cool nights, preserves the acidity and aromatic freshness that mark fine Burgundy. The wine ages in barrel, where measured oxygen exchange through the oak rounds the tannins and adds gentle spice while keeping the fruit and florals to the fore. The colour is bright ruby. The nose leads with raspberry and red cherry over rose, red currant and a touch of black pepper, with an earthy undertone. The palate is elegant and fine boned, with silky tannins, lively acidity and a long, fragrant finish. Serve at sixteen degrees from a large glass. It suits game birds, roast poultry and mushroom dishes.
