Description
Baynos is the Rioja project of the Mauro family, long established in Ribera del Duero, based in the small town of Baños de Ebro in Rioja Alavesa where most of the village works the vines. This white is made from Viura, the region's main white grape, and farmed organically and biodynamically. The wine spends twenty months in oak barrels, a long ageing for a white, with the fruit fermented and then held on its lees in wood. Viura has moderate acidity and a fairly neutral base, which makes it well suited to this kind of extended barrel and lees ageing: the lees release mannoproteins that add weight and a creamy texture, while the slow oxygen exchange through the oak develops nutty, waxy complexity and a savoury depth. The result is a full bodied, textured white built to age rather than a fresh, early drinking one. It pours bright gold. The nose leads with beeswax, hazelnut and toasted bread over ripe pear and a touch of vanilla. The palate is broad and dry, with orchard fruit, an almond and nutty oak frame and a long, savoury finish. Serve at 12 to 13 degrees in a large glass.







Additional information
Serve it with roast chicken, grilled pork or baked white fish in a cream sauce, where the barrel weight and nutty texture come into their own. It also pairs with aged manchego and other hard nutty cheeses.
