Description
Matsu, a project of La Compania de Vinos Vintae, makes La Jefa in D.O. Toro, in Castilla y Leon, as its first aged white. The wine is built on Malvasia with other local white grapes, grown in the hot, dry, high plateau of Toro where old vines ripen fully and give concentrated fruit. The continental climate brings warm days and cold nights, and the wide swing helps the wine keep freshness despite the heat. La Jefa spends fourteen months in 500-litre French oak barrels, larger than a standard barrique, so the oak influence is measured and the exchange with the wine is slow. Lees contact during this time builds a creamy, textured mid-palate, while the barrel adds a gentle toasted, spiced layer. The colour is bright straw with greenish tints, and the nose shows ripe pear, quince, toasted almond and beeswax over a savoury base. The palate is full and dry, with orchard fruit, a rich lees texture and a long, warm finish. Serve at 10 to 12 degrees.

Serve with roast chicken or grilled pork, where the oak weight and lees texture match the richer meat. It also suits grilled meaty fish such as monkfish, and stands up to hard, nutty cheeses like aged Manchego.
