Description
Mathilde Chapoutier, daughter of Rhône vigneron Michel Chapoutier, makes this rosé in Côtes de Provence from the regional trio of Cinsault, Grenache and Syrah. Provence sits on limestone and clay soils in a warm, dry Mediterranean climate, cooled by sea breezes and cooler nights that keep acidity firm and the fruit fresh. The grapes are pressed early with minimal skin contact, the source of the wine's pale colour and gentle red fruit, then fermented cool. The wine then rests five months in stainless steel tanks, which protects the primary fruit and gives a clean, precise profile without any wood influence, while the time on its fine lees adds a little roundness to the palate. The colour is pale pink. The nose shows strawberry and white peach with a citrus and floral edge. The palate is crisp and dry, the red fruit framed by bright acidity and a faint saline note, with a fresh, clean finish. The steel ageing keeps the wine direct and refreshing rather than heavy. Serve well chilled at 8 to 10 degrees.
