Domaine Matassa make this natural Roussillon red from old-vine Hairy Grenache and Carignan, sometimes with a little Mourvedre. Fifteen months in French oak give a fresh, medium-bodied red of red cherry, dried herbs and a stony mineral edge, at just 12 percent.

Description
Domaine Matassa farms small parcels of very old vines across some 15 hectares in the south of France, worked biodynamically and made with very little sulphur and no processing additives. Romanissa Casot is a natural red from Hairy Grenache and Carignan, with a little Mourvedre in some years. Hairy Grenache, a downy-leaved mutation, ripens a touch later and helps hold acidity, which is part of why this wine finishes at just 12 percent despite Roussillon's warm, dry Mediterranean climate. The old vines and cool, high sites keep the fruit fresh and the alcohol restrained, while the schist and granite soils lend a stony, mineral line. The wine is aged 15 months in 500-litre French oak, a larger format that softens the tannins with only a light wood imprint. Expect a medium-bodied, fresh red with red cherry, raspberry, dried herbs and a savoury, stony finish, with fine tannins and bright acidity. Serve at 16 degrees. It suits grilled lamb, beef and roast vegetables.
