Description
Mas Doix is one of Priorat's most respected wineries, based in the village of Poboleda in the north of the appellation and run since 1998 under a philosophy of expressing the essence of the region. Salix blends three grapes typical of the area: Garnacha Blanca, Macabeo and Pedro Ximénez. Each brings something different, Garnacha Blanca lending body and stone fruit, Macabeo freshness and floral lift, and Pedro Ximénez a soft, ripe roundness. The vineyards grow on the slate and quartz llicorella soils that define Priorat, forcing the vines deep for water and giving the wine a firm mineral drive, while the warm climate ripens the fruit fully and the cool nights hold acidity. Vinification is split, with three months in French oak barrels and three months on the lees in stainless steel. The oak rounds the texture through slow oxygen exchange, while the lees contact in steel adds breadth and a fine creaminess without oak flavour. The 2024 shows white peach, apricot and pear over almond, dried herbs and fresh dough, with a broad palate and a saline, stony finish. Serve at 11 to 13 degrees in a large glass.

Additional information
The body and mineral length suit baked white fish, grilled prawns and roast chicken. It also carries roasted root vegetables and richer Mediterranean dishes. Serve at cellar temperature in a broad glass.
