    Mas Doix makes this single-vineyard red in D.O.Q. Priorat in Catalonia, from old Cariñena vines on the appellation's defining llicorella, a fractured slate and quartzite that forces roots deep in search of water. The poor, free-draining soil and the warm Mediterranean climate tempered by altitude give low yields and concentrated fruit, while the wide swing between hot days and cool nights preserves acidity and slows ripening so tannins develop fully. Cariñena planted this far back retains its natural acidity and firm tannic frame, both reasons the variety has long anchored Priorat's structured reds. The wine spends 14 months in barrel, where slow oxygen exchange through the wood softens the tannins and adds spice and a fine grain without burying the fruit. It pours a deep ruby with a dark core. The nose carries ripe plum and cherry over black pepper, liquorice and a smoky, stony note that reads straight back to the slate. The palate is full and firmly structured, the mineral grip and dark fruit running through to a long, savoury finish. Serve at 16 to 18 degrees, ideally decanted an hour ahead, alongside roast lamb or aged hard cheese.
