Description
Martín Códax is one of the best known names in Rías Baixas, and Organistrum is its barrel fermented Albariño, named after a rare medieval string instrument played by two people. The fruit is selected from southeast facing vineyards in the maritime climate of Rías Baixas, where cool Atlantic air, high rainfall and shallow granite soils give Albariño its high acidity, salinity and aromatic lift. This is a more textured expression than a stainless steel Albariño. The wine is partly made in barrel and ages for four months in Allier French oak, and during the first weeks it is left on its lees with regular stirring. That lees contact and stirring release mannoproteins that build a creamier weight, while a measured amount of oak adds a light spice and roundness without covering the fruit. The colour is bright lemon yellow with golden glints. The nose shows white peach, apricot and lemon with white flowers and a touch of honey, and the palate is textured and rounded but kept fresh and precise by Albariño's citrus acidity, finishing clean. Serve it at around 10 to 12 degrees.







Additional information
The extra texture lets this take on richer fish such as monkfish, turbot and grilled tuna, as well as scallops and lobster in butter. It also works with roast chicken and mild pork, while the underlying acidity keeps it at home with simpler shellfish and white fish.
