Description
Martí Fabra L'Oratori is a red from the D.O. Empordà in the far north-east corner of Catalonia, blending Garnacha, Cariñena and Cabernet Sauvignon. Empordà runs from the Pyrenees down to the Mediterranean and is swept by the dry northerly Tramontana wind, which keeps the vines healthy and concentrates the fruit, while the warm coastal climate ripens Garnacha and Cariñena to full, generous flavour at 14.5 percent. The grapes are destemmed and given a cold maceration before fermentation, a slow extraction at controlled temperature that draws colour and aroma gently from the skins. The wine then ages twelve months in concrete vats, which let it settle and round without adding oak, keeping the focus on ripe fruit and the savoury character of the place. Garnacha supplies red fruit and warmth, Cariñena adds dark fruit and freshness, and Cabernet brings structure and grip. It is deep ruby, showing aromas of ripe red and black berries, plum and a warm, spiced, herbal note. The palate is full bodied and round, with ripe tannin, moderate acidity and a savoury finish. Serve at 16 to 17 degrees. It suits grilled ox, pork cutlets, chicken stews and medium-hard cheese.
