Marqués del Real Tesoro makes this Pedro Ximénez in Jerez from grapes sun-dried by the asoleo method. Mahogany in colour and unctuous, it shows dates, figs and raisins with a sweet, jammy depth.
Description
Marqués del Real Tesoro is a Jerez bodega in Cádiz, and this is its Pedro Ximénez from the D.O. Jerez-Xérès-Sherry. After harvest the Pedro Ximénez bunches are spread out for the asoleo, the traditional drying of the grapes in the sun, which shrivels them and intensifies their sugar, aroma and flavour while evaporating much of the water. What remains is a small amount of concentrated, sugar-rich must. Following a partial fermentation the wine is fortified and aged oxidatively in the solera system, where stacked oak butts and the gradual blending of older and younger wine deepen the colour and build the caramel and dried-fruit character of the style. The wine is mahogany coloured. The nose offers the typical sweet aromas of dried fruit, dates, figs and raisins, lifted by hints of jam and spice. The palate is unctuous and full, coating the mouth with sweet dried fruit, molasses and toffee, with a thread of coffee and cinnamon and just enough freshness to carry the long finish. Serve lightly chilled at around 13 degrees in a small glass. It is at home with chocolate puddings and over ice cream.
