Description
Marañones farms this white from the Peña Cruzada plot in the Vinos de Madrid appellation, on the granitic slopes of the Sierra de Gredos foothills at 750 metres. The site is under a hectare, planted to Albillo vines over fifty years old, and cultivated organically. The soil is granite broken down to a sandy texture and only about 50 centimetres deep, which drains freely and forces the roots down through the decomposed rock; the resulting wine carries a fine mineral thread and low yields concentrate the fruit. Altitude brings cool nights that hold acidity through the long ripening. The wine is fermented and aged for twelve months in French oak barrels, and the extended time on its lees builds body and a savoury depth while the barrel adds a slow, gentle oxygen exchange rather than heavy toast. It pours pale gold. The nose leads with white peach, apricot and honey over almond and beeswax, with a light oak spice behind. The palate is broad and textured, the fruit carried on firm acidity to a saline, nutty finish. Serve at 11 to 12 degrees in a white Burgundy glass.

Pairs with roast chicken and herb stuffing or grilled pork loin, where the barrel weight and stone fruit sit comfortably against the meat. The texture also suits richer fish such as baked hake or monkfish, and the almond and honey notes work with a mature Manchego or a nutty hard cheese.
