Barbadillo bottles this Manzanilla en rama from its Nave Trinidad cellar in Sanlucar de Barrameda. Made from Palomino Fino and aged around four years under flor, it is unfiltered and bright yellow, with sharp almond, citrus and a salty, yeasty edge.

Barbadillo Manzanilla Nave Trinidad en Rama is named after the Trinidad, one of the ships that completed the first circumnavigation of the globe after setting sail from Sanlucar de Barrameda in 1519, and follows the local tradition of naming Manzanillas after women. It is made from Palomino Fino grown on chalky albariza soil, which retains winter rain and reflects sunlight to ripen the grapes evenly through the dry summer. After fortification to around 15 percent the wine ages roughly four years under a veil of flor in the criaderas and soleras system. The flor seals the wine from oxygen and feeds on it, producing the dry, saline and yeasty character of Manzanilla. Bottled en rama, with minimal filtration, the wine keeps more of its texture and cellar character than a standard release. The colour is bright yellow. The nose is fresh and incisive, with almond, green apple and lemon over bread dough and a clear salty note. The palate is dry, light and tense, finishing crisp and savoury. Serve well chilled at around 7 to 9 degrees in a white wine glass. Drink it young.
