La Guita en Rama is an unfiltered Manzanilla from Sanlúcar de Barrameda, drawn from the Pago de Miraflores and aged around ten years under flor. Pale gold and bracingly saline, with almond, green apple and sea breeze.
Description
La Guita is one of the benchmark Manzanillas of Sanlúcar de Barrameda, and this en rama version is bottled with minimal filtration so the wine reaches the glass closer to how it sits in cask. It is made from Palomino grown on albariza chalk, fortified to 15 percent and aged for around ten years under a thick layer of flor yeast in the cellars on Calle Misericordia. The flor lives on the surface of the wine, shielding it from oxygen and feeding on alcohol and glycerol while releasing acetaldehyde and compounds that give the saline, yeasty, almond character of biological ageing. Sanlúcar sits at the mouth of the Guadalquivir, and the cool, humid Atlantic air keeps the flor thick year round, which is what marks Manzanilla out from Jerez Fino. This Saca de Abril is a spring drawing, capturing the flor at full strength. It is pale gold, with a fresh nose of almond, green apple, chamomile and bread dough over a clear saline note. The palate is bone dry, light and sharply saline with a clean finish. Serve well chilled at around 7 to 9 degrees. It is excellent with shellfish and as an aperitif.
