Description
Manoir de la Tête Rouge works biodynamically in Saumur, in the middle Loire, where the vines sit on tuffeau, the soft chalky limestone that shapes the region's cellars and its wines. Chenin Blanc on this cool limestone keeps very high natural acidity and a stony, mineral character, and at just eleven per cent alcohol this is a taut, dry example rather than a ripe or off-dry one. Seven months in stainless steel is the key choice: the sealed, temperature-controlled tank keeps oxygen and oak out, protecting the grape's bright fruit, floral aromatics and cutting acidity, while a period on the fine lees adds a little texture without softening the line. The wine is pale in the glass, with green apple, pear and lemon on the nose, lifted by white flowers, chamomile and citrus peel. The palate is dry and crisp, carrying orchard fruit through a chalky, saline finish. Serve well chilled at 8 to 10 degrees in a standard white glass.
