Description
Macaronesia is the old name for the scattering of Atlantic islands that includes the Canaries, a place Greek myth once called the cradle of the gods. Macaronesian White Gin leans hard into that volcanic origin: its botanicals and the mineral-rich water drawn through volcanic rock both come from the islands, and the local citrus and angelica give it a distinctly Mediterranean cast. Distillation with that volcanic water is what lends the spirit its notably soft, rounded body.
The nose is fresh and citrus-forward, limes and lemons and oranges over a quiet juniper hum. On the palate it stays elegant and balanced, with spicy cardamom, earthy angelica root and fruity peel woven together, before a long, smooth finish carrying juniper, herbs and a faint saline lift. Pour it over ice with a Mediterranean tonic and a sprig of rosemary.
