    M de Minuty is the organic Provence rosé from Château Minuty in the AOC Côtes de Provence. A Grenache-led blend with Cinsault and Syrah, pale and dry in the classic Provençal style, with red fruit, peach and a citrus lift.

    Château Minuty is one of the classified estates of the Côtes de Provence, and M de Minuty is its widely poured organic rosé. The blend leads on Grenache with Cinsault and Syrah. Provence has a warm Mediterranean climate softened by sea breezes and the drying mistral, conditions that keep the grapes clean and let the estate pick at moderate ripeness for a pale, delicate style. Direct pressing and cool fermentation in stainless steel preserve the very light colour and the primary fruit, with no skin maceration to speak of and no oak, so the wine stays fresh and aromatic rather than textured. The colour is pale pink with a silver cast. The nose shows fresh red berries, white peach and white flowers, with a clean citrus edge and a hint of melon. The palate is dry and crisp, the red fruit carried on bright acidity to a light, refreshing finish. Serve well chilled at 8 to 10 degrees in a white wine glass. It is an aperitif first but pairs neatly with grilled fish, shellfish and Mediterranean salads.
