Description
Maison Chapoutier has farmed the Hermitage hill with biodynamic and organic methods since long before they were fashionable, and this white comes from a single parcel of Marsanne vines of around seventy years of age. Old Marsanne on granite gives very low yields and a wine of weight and texture rather than overt aromatics, the granite and the steep aspect lending a saline cut that keeps the richness in check. The wine is fermented and aged in oak, where contact with the lees and slow oxygen exchange build the broad, waxy mouthfeel that marks fine Hermitage Blanc, while malolactic fermentation softens the acidity into something rounder and creamier. It is a white made to age, gaining honey and nut character over time. In the glass it is full and golden, with aromas of ripe apricot, white peach and acacia honey over almond, beeswax and white flowers. The palate is broad and oily, the oak folded into the fruit, finishing long and mineral. Serve at 12 to 13 degrees in a full white glass, and give younger bottles a little air. It suits roast chicken, richer fish and pork.
