M. Chapoutier, the biodynamic Rhone maison founded in 1808 at Tain-l'Hermitage, makes Les Varonniers as a single-vineyard Syrah from Crozes-Hermitage, the largest appellation of the northern Rhone. The best Crozes sites sit on granite slopes and stony terraces, well-drained soils that give the variety its savoury, peppery character and a firm mineral spine. The continental northern Rhone climate, with warm days and cool nights, ripens the fruit fully while preserving the acidity and structure Syrah needs to age. The wine is aged eighteen months in barrel, where slow oxygen exchange builds and softens the tannin and adds fine spice and toast in support of the fruit. The colour is deep and dark. The nose shows ripe plum and fleshy blackberry with violet, black pepper and dried herbs over a smoky base. The palate is full and savoury, with firm, ripe tannin, good freshness and a long, peppery, mineral finish. Serve at 17 to 18 degrees, decanting an hour ahead for younger vintages. It pairs naturally with roasted and grilled red meats.
