Description
Lustau is a century-old Jerez house that builds its vermouths on a Sherry base. This rosé combines three wines: a dry, light Fino aged under flor for savoury freshness, a sweet and floral Moscatel for perfume and sweetness, and Tintilla de Rota, a local red variety, for colour and lively structure. The Palomino base of the Fino grows on the chalky albariza soils of the Jerez triangle, where the limestone holds moisture and lends saline freshness, while ageing under flor develops the yeasty, dry character that anchors the blend. The three wines are macerated with botanicals in the traditional method, among them chamomile for an aromatic, slightly bitter lift, nutmeg for spice, vanilla for aroma and wormwood for the characteristic bitterness. The colour is a pale pink. The nose offers wild strawberries, orange blossom and candied fruit with pastry, almond and floral, herbal nuances. The palate is gently sweet and delicate, with spicy and herbal notes and a soft bitter close. Serve well chilled at 6 to 8C over ice with a strawberry or orange twist. It makes an easy aperitif and partners light savoury and sweet bites.
