Louis Latour makes this Chassagne-Montrachet from Chardonnay in the Cote de Beaune, aged eight months in oak barrels. It is a classic white Burgundy of white peach, hazelnut and toast over a stony, mineral core.

Description
This Chassagne-Montrachet comes from Maison Louis Latour, a family owned Burgundy house founded in 1797, and sits within one of the Cote de Beaune's leading white appellations. The Chardonnay is grown on the limestone and marl slopes of the Cote d'Or, where the calcareous soils and cool continental climate give the fruit its fine acidity and the mineral tension that defines the region. The wine is aged eight months in oak barrels. Barrel ageing and time on the fine lees, together with malolactic fermentation that converts sharp malic acid into softer lactic acid, build the creamy texture, gentle vanilla and toasted character that mark oaked white Burgundy, while the barrel adds slow oxygen exchange and structure without overwhelming the fruit. Expect a bright gold colour, a nose of white peach, hazelnut and buttered toast over lemon and orchard apple, and a rounded, textured palate held together by a stony, saline finish. Serve at 11 to 13 degrees in a large white glass to open the aromatics.







Additional information
Classic with roast chicken, salmon or monkfish, and with lobster or crab in butter, where the oak and lees texture meet the richness of the dish. It also suits Comte and aged Gruyere. Serve it in a generous glass and not too cold.
