Description
La Chanfleure is the unoaked Chablis from Maison Louis Latour, a Burgundy house making wine since 1797. Chablis sits at the cool northern edge of Burgundy, and its identity comes from the Kimmeridgian soil beneath the vineyards, a marly limestone packed with tiny fossil oyster shells laid down when the area was under a shallow sea. This calcareous base and the cool climate give Chardonnay here its high acidity and distinct chalky, saline minerality. The wine is fermented and raised without any oak, so the fruit stays pure and the stony character comes through clearly. It is aged on its fine lees, and that contact releases mannoproteins that add a rounder texture and a soft savoury note while keeping the wine fresh. Malolactic fermentation softens the sharpest acidity into a more supple line. The colour is pale straw with green glints. The nose shows lemon, green apple and pear with a floral, chamomile edge. The palate is dry and taut, with citrus fruit and a chalky, saline finish that is typical of the appellation. Serve at 9 to 11 degrees.
