Description
Louis Latour has farmed vineyards in Chablis for more than two centuries, and this Premier Cru comes from the classified slopes above the Serein valley in the northern tip of Burgundy. Chablis sits on Kimmeridgian limestone, a grey marl packed with fossilised oyster shells, and that seam of ancient seabed is the source of the wine's saline, flinty character. The cool continental climate and the risk of spring frost make this a marginal site, which keeps yields modest and acidity high. Vinification is in stainless steel with no oak, and eight months on the fine lees before bottling, a reductive ageing that adds a subtle creamy weight through mannoprotein release while keeping the fruit precise and the minerality unmasked. Expect a pale colour with a green tint, a nose of green apple, lemon, white flowers and wet stone, and a taut, chiselled palate with citrus, orchard fruit and a distinct saline chalk finish that marks the Premier Cru sites. At 13% it is dry and linear. Serve at 10 to 12 degrees.
