Description
Maison Louis Jadot, founded in Burgundy in 1859, makes this white from the village of Puligny-Montrachet on the Côte de Beaune. The wine is Chardonnay grown on the limestone and clay-marl soils that define Puligny, where a high proportion of active limestone gives the village its taut, mineral drive and its reputation for precision among white Burgundies. The cool continental climate and slow ripening on these slopes preserve acidity and fine aromatic detail. In the cellar the wine is fermented and aged fifteen months in French oak. During that time it rests on its lees, and the malolactic conversion of sharp malic acid into softer lactic acid, together with the slow oxygen exchange through the barrel, builds a broad, creamy texture and a gentle toast around the fruit. The colour is bright pale gold. The nose is refined, with white peach, white flowers and lemon over hazelnut and toasted bread. The palate is concentrated and layered, the oak and lees weight carried by a firm mineral spine and a long, saline finish. Serve at 12 to 13 degrees in a white Burgundy glass.
