Description
Louis Jadot is one of Burgundy's best-known producers and negociants, founded in 1859 and working exclusively with Burgundy wines from its own cooperage since 1995. Couvent des Jacobins is its house Bourgogne, a pure Pinot Noir blended from fruit across the Cote d'Or and the Hautes Cotes, including Gevrey and the Maranges. Burgundy's classic soils are limestone and clay, which drain well and give Pinot Noir its bright acidity, red fruit and fine mineral structure, while blending across sites builds consistency and balance in a regional wine. The grapes are fermented and then aged for eight months in French oak, a portion of it new, where gentle oxygen exchange through the wood rounds the tannins and adds a light spice without covering the fruit. The wine is a clear, bright ruby. The nose is fresh and typical, with red cherry and strawberry over a touch of rose and light oak spice. The palate is medium bodied and smooth, with soft tannin, fresh acidity and a gentle earthy finish. This is an easy, well-made introduction to red Burgundy. Serve at 15 to 17C in a large glass. Good with roast chicken, duck and mushroom dishes.
