Los Loros Albillo Criollo is a barrel-aged white from the Albillo grape, made in the Valle de Güímar on Tenerife by Juan Francisco Fariña Pérez. Grown on volcanic soils with minimal intervention, it is textured and savoury, with white peach, apricot and a saline, mineral edge.

Description
This barrel-aged white comes from the Valle de Güímar on Tenerife in the Canary Islands, made by Juan Francisco Fariña Pérez at a long-standing family winery that turned from bulk production to bottling estate wines in 1999. The grape is Albillo, a native Canary variety, farmed with minimal intervention on the island's dark volcanic soils. Those free-draining volcanic soils, along with warm days, cool Atlantic nights and high-altitude vineyards on the mountainside, give the wine ripe stone fruit held in check by fresh acidity and a distinct saline minerality. Ageing in barrel adds a light savoury, nutty frame through slow oxygen exchange and lees contact, rounding the texture without dominating the fruit. The colour is bright yellow with golden tones. The nose shows white peach and apricot with citrus peel, white flowers, a note of almond and beeswax, and a smoky mineral lift from the volcanic ground. The palate is dry, textured and savoury, the barrel weight balanced by acidity and a saline finish. Serve at 10 to 12 degrees.






Additional information
The volcanic salinity and barrel weight suit grilled fish, tuna and octopus, as well as roast chicken and pork. It also works with roasted root vegetables and squash. Canary classics such as papas arrugadas with mojo are a natural regional match.
