Los Frailes Trilogía is the first wine made by Miguel and María José Velázquez, the thirteenth generation at Casa Los Frailes in the Vall dels Alforins, southwest of Valencia. It brings together three grapes: Monastrell for body and dark fruit, Cabernet Sauvignon for structure and freshness, and Tempranillo for its red fruit and supple texture. The vineyards lie at altitude on limestone soils, farmed biodynamically, and the high inland setting gives hot days and cold nights that lengthen ripening and keep the wine balanced rather than heavy. The blend is aged for twelve months in barrel, where slow contact with oak and oxygen knits the three varieties together, rounds the tannins and adds a measured frame of spice and toast. It pours a deep ruby. The nose shows blackberry and plum from the Monastrell, cherry and red fruit from the Tempranillo, and a savoury thread of dried herbs, pepper and cedar. The palate is full and structured, with ripe dark fruit, fine tannins and a long, herbal finish. Serve at 16 to 18 degrees, decanting ahead. It suits grilled and roast meats, game and roasted vegetables.
