Description
Los Danzantes Tobala is an artesanal joven mezcal made by hand from the small wild Tobala, Agave potatorum. Tobala is slow growing and wild harvested, and Los Danzantes, based in Santiago Matatlan in Oaxaca, treats it as a limited release that shows the delicate end of the agave spectrum.
Production follows the artesanal route. The agave is roasted in a stone lined, wood fired pit, milled with a horse drawn stone wheel, fermented naturally with local yeast in 800 litre pine vats and double distilled in copper. The result is fresh and finely balanced: a sweet, bittersweet nose of quince and roasted maguey with bursts of sharp freshness, then a palate of citrus and light sweetness closing on concentrated green herbs and a play of soft smoke. At 48% it carries its strength gently.
