Description
Los Danzantes Espadin Joven is an artesanal mezcal made from 100% Espadin (Agave angustifolia) hand harvested in the valleys of Oaxaca. Los Danzantes works out of Santiago Matatlan with a chemistry-minded house style, and this joven is bottled undiluted to show the cooked agave and regional character rather than any wood.
The agave is roasted in a stone-lined, wood-fired pit, then crushed by a horse-drawn millstone. Fermentation runs naturally in 800 litre pine vats with yeast native to the region, followed by double distillation in copper. The result is balanced and silky, opening on roasted agave and fresh green herbs, moving through light fresh fruit and concentrated herbs in the middle, and closing on sweet roasted maguey with a lingering note of smoke and wood, all carried at 47%.
