From Signatory Vintage's Cask Strength Collection, this Symington's Choice 27 Year Old is a 1996 vintage from Oloroso cask 105097, an outturn of 534 bottles.

Twenty-seven years in Oloroso built deep sherried maturity, the cask's melanoidins giving dried fruit and its tannins a nutty grip.

At 57.8% it shows chocolate, old wood, dried fruit, a sherried character, citrus and a cooked-vegetable depth, undiluted. A Symington's Choice 27.
