North Star Spirits, the Glasgow independent founded by Iain Croucher, bottles this 15 Year Old in its Cask Series, a 2005 vintage matured in Oloroso, an outturn of 596 bottles at a powerful strength.
Fifteen years in Oloroso built deep sherried maturity, the cask's melanoidins giving dried fruit and its tannins a leathery grip.
At 63.1% it shows dried fruit, leather, a sherried character, old wood, tobacco and chocolate, undiluted. A Cask Series 010.
