Description
The Vintage Malt Whisky Company, a Glasgow house, releases the Cooper's Choice range. This 25 year old Littlemill, from cask 105 was distilled in 1985 and bottled in 2011, part of The Cooper's Choice series. As the last casks are bottled, Littlemill grows scarcer with every release.
Twenty-five years of ex-Bourbon soften Littlemill's soft orchard-fruit spirit.
At 46%, vanilla and pale oak from the ex-Bourbon. A fragrant, fruity Littlemill, honeyed and silky. Wood sugars from the caramelised hemicellulose give a light toffee, while lignin yields the vanillin behind the vanilla. Time has thinned the cask and eased the alcohol, the humid air drawing off spirit faster than water until only this concentrated remainder is left.
