Description
Cihuatan Viento is an aged release from Licorera Cihuatan, the El Salvador estate distillery named for a nearby archaeological site and increasingly recognised among Central American producers. Carrying fifteen years of stated age, it represents the more mature, wood driven end of the Cihuatan range.
Distilled on a column still from estate grown cane and matured in ex-bourbon casks, it was bottled at 43.5%. The profile is led by a pronounced young wood and oak character, with marzipan, orange and a clear pineapple note adding fruit, and the finish carrying marmalade and oak. The wood influence is forward for the age, giving it a drier, more tannic shape than the sweeter Latin American style some might expect. This is an aged sipper for those who enjoy an oak led, lightly fruity rum, best appreciated neat by drinkers who lean toward the drier, more structured side of Central American rum.
