Licorera Cihuatan in El Salvador makes this Artesano Pineapple Edition, taking a ten year old column still rum and flavouring it with pineapple, bottled at 40%. It is openly a sweetened, infused rum, so it should be read as a fruit forward easy drinker rather than a dry aged sipper.

The base is molasses spirit aged in ex-bourbon oak, but the pineapple sits front and centre, candied and tropical across nose, palate and finish alongside vanilla and a caramelised edge. Drinkers note it is less sugary and less artificial than many pineapple rums, with a genuinely caramelised fruit character, though added sugar is plainly present. Light and approachable, it is at its best in cocktails and long drinks, where the clean pineapple note does real work.
