Description
Dominique Lafon founded Les Héritiers du Comte Lafon in 1999, extending his family's Burgundian name into the Mâconnais in southern Burgundy, convinced of the region's potential. This white is a varietal Chardonnay from the Les Maranches vineyards around Uchizy, in AOC Mâcon, farmed biodynamically. The soils are limestone, the classic Mâconnais base that gives these whites their tension, chalky grip and clear-cut fruit. The wine is barrel aged. It ferments and matures in wood on its fine lees, which are held in contact to release mannoproteins that build a creamy weight, while gentle oxygen exchange through the barrel and a natural malolactic fermentation soften the acidity and add a toasted, nutty layer. Lafon's touch keeps the oak restrained, so the fruit and minerality lead. The colour is bright straw gold. The nose is precise, with white peach, lemon, pear and white flowers over toasted bread and hazelnut. The palate is dry and layered, with fresh acidity, a fine creamy texture and a long, mineral finish. Serve at 11 to 12 degrees in a white wine glass.

Pairs with roast chicken, sole in butter and scallops. The lees texture and gentle oak also suit Comté and other hard, nutty cheeses.
