Description
Les Foulards Rouges Le Fond de l'Air est Rouge is a natural Cinsault made by Jean-Francois Nicq in the Piemont des Alberes, in the eastern Pyrenees of Roussillon near the Spanish border. The fruit comes from vines around 80 years old, whose deep roots and low yields concentrate flavour while the cool foothill site and altitude keep acidity high and alcohol low, here just 11 per cent. The wine is made by carbonic maceration, where whole bunches ferment in a sealed, carbon-dioxide-rich tank so fermentation begins inside the intact berries; this extracts bright fruit and colour with little tannin and gives the lifted, almost floral aromatics typical of the method. It is then aged in stainless steel to preserve freshness, with no oak, and made naturally without additives, organic and vegan. The colour is a bright, light ruby. The nose is fragrant, showing red berries, cherry and redcurrant with a rose-like floral lift and a peppery, herbal edge. The palate is light, juicy and fresh, with soft tannins, vivid acidity and a clean finish. Serve cool, around 13 to 14C. It suits charcuterie, roast poultry and lighter dishes.
