Description
Legaris is a Ribera del Duero winery with 100 hectares of vineyards across the municipalities of Curiel de Duero and San Martín de Rubiales in Burgos. This Roble is made entirely from Tinto Fino, the local name for Tempranillo, grown on the estate's loamy-sand, alluvial and gravelly soils. Ribera del Duero sits high on the Castilian plateau, where vineyards above 700 metres face hot days and cold nights. This wide diurnal range slows ripening, holds natural acidity and builds colour and aromatic intensity in the skins, even in a young, early-drinking style. After a gentle destemming, the grapes undergo a cold pre-fermentation maceration at low temperatures, which extracts colour and fresh fruit aromatics before fermentation begins. The wine then spends just three months in oak barrels, enough to round the edges and add a light frame of vanilla and spice while keeping the fruit fresh and primary. The short oak ageing is what defines the Roble category. It pours a bright, deep ruby colour, with a nose of ripe red fruit, strawberry, cherry and a hint of plum, wrapped in a touch of vanilla. The palate is medium bodied, juicy and approachable, with soft tannins. Serve at 15 to 16 degrees. It suits grilled pork, roast chicken and tomato-based dishes.
