Legaris draws this Ribera del Duero from high-altitude Tinto Fino at over 1,000 metres around Curiel de Duero. Eleven months in oak give an intense, violet-tinged red of ripe black fruit and spice, structured and full at 15 percent.
Description
Páramos de Legaris comes from Legaris, the Codorníu Raventós estate in the Ribera del Duero, sourced from high-altitude páramos, flat, bare expanses of land sitting over 1,000 metres above sea level around Curiel de Duero. The wine is made from Tinto Fino, the local Tempranillo, planted on poor, stony soils at altitude where it ripens slowly. The extreme elevation widens the diurnal range, with hot days driving sugar and colour and cold nights preserving acidity and aromatic freshness, so the wine keeps tension despite a ripe 15 percent. After fermentation it is aged for eleven months in oak barrels, where slow oxygen exchange resolves the firm young tannins and adds spice, toast and depth. The colour is intense cherry-red with violet highlights. The nose is enveloping, with ripe black fruit, red fruit and spice over a savoury, mineral base. The palate is full-bodied and structured, with ripe tannin, fresh acidity from the altitude and a long, spiced finish. Serve at 16 to 18 degrees, decanting to let it open. It suits grilled and roast red meats.
