Description
Le Petit Cheval Blanc comes from Chateau Cheval Blanc, one of the most prestigious estates of Saint-Emilion, whose 41 hectares sit on distinctive stony and sandy soils. While the property is best known for its red, this white is a barrel-aged blend of Sauvignon Blanc and Semillon farmed under organic viticulture. The two grapes work in balance: Sauvignon Blanc brings citrus drive and cut, while Semillon adds weight, a waxy texture and the capacity to age. The wine is fermented and aged for 18 months in oak barrels, a long elevage that folds vanilla and toast into the fruit and, through contact with the lees, builds a creamy, rounded body. The result is a white of richness and depth rather than sharp aromatics. Expect a bright straw colour and a nose of lemon, white peach, beeswax and a nutty, oaked edge. The palate is full and textured, with ripe citrus, almond and a long, savoury finish carried by fine acidity. Serve at 11 to 13 degrees in a large glass.

Match its weight with lobster or crayfish in butter, roast chicken or turbot in a cream sauce. The oak and texture also stand up to hard nutty cheeses such as aged Comte or Gruyere. Keep the flavours savoury rather than acidic to let the wine show its richness.
