Description
Le Paradou is a Provence venture set up by Alexandre and Frédéric Chaudière of Château Pesquié, its name taken from the old Provençal word for paradise. This white is made from Vermentino, the Mediterranean grape known locally as Rolle, grown on higher altitude sites where the diurnal shift between warm days and cool nights preserves freshness and aromatic detail. The wine is fermented and held in stainless steel for around three months, a reductive approach that protects the grape's primary fruit and its mineral, saline character with no oak influence at all. It pours pale with a green tint, showing lemon, green apple and pear over white flowers and a hint of Mediterranean herb. The palate is dry, light and crisp, with citrus fresh acidity and a stony, sea salt edge running through a clean finish. It is built for early drinking and easy pairing rather than weight. Serve it well chilled at around 8 to 10 degrees.
