Description
Le Paradou Cinsault rouge is made in the south of France under the IGP Méditerranée, from the Cinsault grape that is indigenous to the Languedoc-Roussillon and a cornerstone of Provence, where it more often goes into the region's rosés. Here it is bottled as a single variety red. Cinsault is a high yielding variety prized for its delicacy when yields are kept in check, giving pale, perfumed wines low in tannin. The warm, dry Mediterranean climate ripens the fruit fully while the variety's natural lightness keeps the wine fresh and fragrant. This is an unoaked wine, fermented and bottled young to capture primary fruit and aromatics, with no barrel character to weigh it down. It pours a bright, pale red, with raspberry, red currant and cherry on the nose lifted by a floral, lightly peppery note. The palate is light and supple, soft in tannin, with juicy red fruit and a fresh, easy finish. This is a red that can stand in for a white, served slightly cool at 13 to 14 degrees. Pair it with roast chicken, charcuterie, grilled salmon or a summer salad.
